Sodium Propionate is the sodium salt of propionic acid that is produced during the chemical degradation of sugar. It is a safe compound that is toxic to mould and some bacteria, prolonging shelf life. It is a food additive and has a food label of E281. Widely used in bakery products as its concentrations are commonly low enough that you can't taste it in products.
